
Air fryers have become very common in kitchens around the world recently. Or rather, they’ve found their place in some small corners – these little machines aren’t exactly large, right? We got our first Air Fryer more than ten years ago and were using it regularly. It’s simply perfect for dishes like these Easy Peasy Air Fryer Chicken Fajitas. A quick and easy dinner like that is always welcome in our house.

Air fryers have become increasingly popular lately here in Germany. Well, probably all around the world as well. Nowadays you get them for some pennies. Well, almost. But they got quite cheap in the past ten years. Anyway. Very practical machines. They don’t take up much space, and you can prepare or reheat your food super quickly.
Of course, you could prepare everything you can do in an Air Fryer in a regular oven as well. However, the larger ovens usually take a while to preheat, and their size means they also use more energy. With the recent rise in energy prices, this aspect is becoming increasingly important in the kitchen (at least for us here). An Air Fryer has a smaller cooking space, shorter cooking time, lower electricity costs – that’s probably the simplest way to summarize it.

Of course, there are differences in energy consumption between individual Air Fryers, but in most cases, they are considerably more energy-efficient compared to a standard oven. And I won’t even mention the fact that there’s less cleaning to do with a smaller appliance… Many Air Fryers allow you to throw the basket you are using to prepare the food directly into the dishwasher. So good!
Anyway. One of our favorite weeknight meals to make lately: quick and easy Air Fryer Chicken Fajitas. You simply mix chicken breast, onions, and bell peppers, season them well, and then you throw everything into the Air Fryer basket. Couldn’t be easier. The appliance does the rest for you while you can do other stuff…

With the roasted chicken and veggies, you got the foundation for delicious fajitas. For dinner, we simply place everything on the table, along with some cooked rice, avocado, and maybe some tomatoes or cucumbers. Additional sauces like Sriracha and/or sour cream are also nice. Finish everything with some small flour tortillas and the dinner is ready. Everyone can assemble the fajitas the way they like. Simply perfect!
What you add to the roasted chicken/veggies to complete the fajitas is entirely up to you. I definitely recommend adding some fresh, crisp veggies – you want that crunch when biting into the fajitas. The different textures make it all the more interesting…

INGREDIENTS / INGREDIENTS
(4 servings)
For the veggies & chicken:
some olive oil
2 red onions, cut into wedges
3 bell peppers (red, yellow, orange or green), cut into strips
18 oz. (500g) chicken breast, cut into strips
1 tbsp. cornstarch*
1 tsp. chili powder*
1 tsp. smoked paprika powder*
1 tsp. dried oregano*
1/2 tsp. garlic powder*
1/2 tsp. onion powder*
1/2 tsp. ground cumin*
1/4 tsp. cayenne pepper*
1/4 tsp. sugar
some salt, pepper
For the fajitas:
4 flour tortillas* (or more)
1 avocado, sliced
some cooked or fried rice (eg seasoned rice)
some sour cream
some grated cheese
some fresh coriander, chopped
1 lime, cut into wedges
(4 servings)
For the vegetables & chicken:
some olive oil

1 tbsp cornstarch*
1 tsp chili powder*
1 tsp smoked paprika powder*
1 tsp oregano*
1/2 tsp garlic powder*

1/2 teaspoon cumin*, ground
1/4 tsp cayenne pepper*
1/4 tsp sugar
some salt, pepper
For the fajitas:
4 flour tortillas* (or more)

some boiled/fried rice (e.g. seasoned rice)
some sour cream
some grated cheese
some coriander, chopped
1 lime, cut into wedges


DIRECTIONS / PREPARATION
1. Start with the veggies. Peel the onions, halve them and cut them into wedges. Clean and deseed the bell peppers and cut them into thin strips. Place everything in a large bowl. Clean the chicken and cut it into (not too thin) strips. Add it to the bowl with the veggies. Mix the cornstarch with the spices, add to the bowl with the veggies and meat and mix everything well.
2. If necessary, preheat the Air Fryer and set it to a temperature of 190°C (375°F). Add the seasoned veggies and meat to the Air Fryer basket, distribute evenly and bake/roast for about 15-16 minutes. Move/flip occasionally so everything cooks evenly. If you only have a small Air Fryer, you may have to do it in two batches – there shouldn’t be too much in the basket so everything cooks properly.
3. Serve the finished veggies/chicken mixture together with flour tortillas, avocado, rice, sour cream, grated cheese and some chopped coriander so that everyone can put something together themselves. Drizzle lime juice over the finished fajitas to enhance the flavors.

3. Serve the finished vegetable and chicken mixture together with flour tortillas, avocado, rice, sour cream, grated cheese and chopped coriander so that everyone can put something together themselves. Drizzle lime juice over the finished fajitas to round out the flavors.
