We use three bars of dark chocolate for this recipe. Why? Because the bitter note harmonizes perfectly with the sweet airiness of the rice. The chocolate should have a silky, shiny texture when melted. When buying, look for a cocoa content of at least 55% to 70%. The higher quality the chocolate, the finer the melting experience in your mouth.
