Gluten-free bread isn’t just for allergy sufferers, this tasty lentil bread is super simple and really surprised me. Of course, it doesn’t contain any flour and only contains red lentils, water and a few spices. You don’t need more for a juicy, filling bread that tastes mildly nutty. I like it very much because it is easy to prepare. You don’t have to knead it, it doesn’t have to rise, you hardly have to put any effort into it. Just soak the lentils the evening before. Simply mix the ingredients, put them in the oven and your new favorite bread is ready! It is ideal for breakfast, as a small snack in between, with soup and salad. I toasted it that way I like it best. Finally a bread that you can enjoy with a clear conscience – try it out!

Why bake gluten-free bread?

Whether you eat gluten-free, are vegan, want to add more protein to your diet or simply want to eat healthier bread – lentil bread is always suitable. You prepare it in less than 20 minutes and it goes in the oven. Incorporating more legumes into your diet is particularly valuable, as it ensures more fiber and more protein!

Lentil bread recipe

Ingredients

250 g red lentils

2 tbsp psyllium husks

2 tbsp apple cider vinegar

1 teaspoon baking powder or baking soda

1 tsp salt

2 tbsp olive oil

150 ml water

Bread spice

Seeds of your choice

preparation

  1. Wash the lentils thoroughly and ideally soak them overnight.
  2. The next day, drain and puree finely in a blender with approx. 150 ml of fresh water and the remaining ingredients.
  3. Let the mixture swell for 15 minutes.
  4. Pour the dough into a greased form or one lined with baking paper.
  5. Bake the bread at 180 °C top/bottom heat for approx. 60 minutes.
