Easy Speculoos Dessert – Christmas Tiramisu in 15 mins

Speculoos Dessert Recipe Steps:

Step one: Prepare the Rote Grütze (Red Berry Compote):

In a saucepan, combine most of the mixed berries, sugar, vanilla extract (affiliate link)and water. Bring to a boil and simmer for approximately 5 minutes until the fruit starts to fall apart. Meanwhile, mix cornstarch with a little water in a small bowl until you achieve a thick paste without any lumps. Remove from heat and stir in the remaining whole berries. Leave to cool to room temperature before assembling your dessert.

Step Two: Prepare the Yogurt or Cream:

If using whipped cream: Pour the chilled heavy/whipping cream, vanilla extract (affiliate link)etc sugar into a tall mixing bowl. Using a hand mixer or a stand mixer with a whisk attachment, start whipping the cream on low speed. Gradually increase the speed until soft peaks form and the cream holds its shape. Store in the fridge until ready to use.

  • For a light dessert, Just use plain yogurt on his own.
  • For a lighter, fluffier texture: Mix the yogurt with the whipped cream in a 50:50 ratio.
  • For a decadent, rich dessert: Mix the whipped cream with mascarpone (1:1 ratio) instead of yogurt.

Step Three: Crumble the speculoos cookies

Crumble up the Speculoos cookies into small pieces. If you’re serving the dessert in individual glasses, keep one cookie aside for decoration on top.

Step Four: Layer the dessert

Now layer one tablespoon of Red fruit jelly into each glass. Follow with a layer of the yogurt cream (or mascarpone cream). Next, add a layer of cookie crumbsthen another layer of creamand finally top with a dollop of Red fruit jelly. Decorate the dessert with a Speculoos cookie and a sprinkle of cinnamon sugar. Refrigerate until ready to serve.

Alternatively: Use the same layering method if you’d rather prepare the dessert in a large casserole dish instead of individual glasses.
