Asparagus recipe – crispy fried asparagus

Ingredients

500 g white asparagus

1 shallot

10 chive stalks

2 tbsp butter

A pinch of coarse sea salt & freshly ground pepper

preparation

  1. Wash the asparagus and cut off the woody ends (approx. 2-3 cm), then peel and cut into pieces. I like to make slanted pieces about 2cm, but you can cut it however you like. Peel the shallot and cut it into small cubes. Heat a pan and foam the butter in it and add the onions.
  2. Add the asparagus and fry for about 6-8 minutes. Swirl the pan regularly so that the bars are evenly browned and crispy on all sides.
  3. Cut the chives into small pieces.
  4. Once the asparagus has the desired browning, remove the pan from the heat. Add the chives and season with sea salt, pepper and lemon juice.
