Apple & Berry Cornflakes Crumble

This simple dessert is the best proof that you can combine incredible flavors and texture with just a few ingredients. This Apple & Berry Cornflakes Crumble is fruity, crunchy, and really easy to prepare. Who would have thought that you could do so much more with cornflakes than just drown them in cold milk in the morning! Whether as a quick dessert during the week, a sweet finish to a dinner, or just a comforting treat on a rainy weekend, this crumble is always perfect!

The base for this recipe are juicy apples and a mixture of frozen berrieswhich provide a pleasant balance of sweetness and acidity. Apples are not only available fresh all year round but also keep their structure when baked, which means the crumble doesn’t become mushy so quickly. Blueberries, raspberries, and currants add freshness and a slight tartness that balance the dessert wonderfully. Thanks to frozen berries, you can easily prepare this dessert all year round. Together, apples and berries make a really delicious base for the crumble.

The special thing about this recipe is the cornflake crumble topping. Traditionally, you would make a streusel topping with flour, sugar, and butter. But since we don’t always like things to be too traditional, we’ve simply used cornflakes here. The breakfast cereal is mixed with shredded coconut and condensed milk (regular and sweetened condensed milk combined) and then spread over the fruit. When baked, the sugar in the condensed milk caramelizes slightly, making the cornflakes very crunchy and giving them a nice golden brown color. Together with the fruit/berries underneath, it’s simply a great combination!

If you’re not a big fan of apples and berries together, you can adapt the recipe to suit your taste, of course. If you prefer plums in the fall, for example, no problem at all. You prefer peaches or nectarines? That works too. That’s the great thing about crumbles – you can prepare them any way you like and the result is (almost) always delicious! With a little vanilla custard or ice cream on the side, you’ll ALWAYS have a delicious dessert on the table.

By the way, this recipe is another one for the monthly »Bake Together – The Baking Surprise« with my dear blogger friend Andrea from Cinnamon Cookies & Apple Tart. Most of you probably know our little baking event by now. Once a month, we get together (virtually), decide on a theme, and then get baking (or sometimes even cooking). Just to see what we each come up with, based on the topic. In the end we surprise each other with the results… which explains the name of the event. Right?! ;P

As mentioned above, this crumble can also be made with plums, for example. If you prefer a classic recipe for that, take a look at our simple Damson Plum Crumble. That one is made with classic streusel topping instead of cornflakes.

In summer, we love to use fresh fruit, such as strawberries, for our crumbles. Our easy Strawberry Crumble (some call it cobbler) is just perfect for this. A sweet dessert that is simply perfect thanks to the strawberries. Add a little fresh cream on top and your afternoon is saved. Some afternoons literally cry out to be saved… eg during the week, when you’ve been working at the computer all morning.

DIRECTIONS / PREPARATION

1. Preheat the oven to 180°C (350°F). Take the frozen berries out of the freezer and let them thaw until needed in the recipe.

2. Peel, core and cut the apples into (not too) small pieces. Combine with the lemon juice, brown sugar, and some vanilla powder. Add the apples to a casserole dish or pie dish with a high rim. Place in the oven and bake for about 15-20 minutes.

3. While the apples are in the oven, prepare the topping by mixing cornflakes, shredded coconut, sweetened condensed milk, and evaporated milk in a bowl.

4. Take the apples out of the oven, add the slightly thawed berries and mix in. Top the fruit with the cornflakes mixture and bake another 20-23 minutes – until golden brown and crisp. Take out of the oven and let cool down a bit. Serve the crumble with some vanilla ice cream or vanilla custard.

2. Peel the apples, core them and then cut them into (not too) small pieces. Pour into a large baking dish or pie dish with high sides. Mix with lemon juice, brown sugar and a little ground vanilla and then Bake in the preheated oven for about 15-20 minutes.

3. While the apples are sizzling in the oven, prepare the topping. To do this, mix the cornflakes with grated coconut, sweetened condensed milk and normal condensed milk in a bowl.

4. Take the dish with the apples out of the oven and then mix the thawed berries into the apples. Next, spread the cornflake mixture over the fruit and put it back in the oven. Bake the crumble for another 20-23 minutes – the cornflakes should have a little color and be crispy. Remove from the oven and let cool down a little. Serve the crumble with vanilla ice cream or vanilla sauce, if desired.
