Ingredients

  • 1 ½ cups (150 G) ground hazelnuts or other nuts
  • 1 ¼ cups (150 G) cups of all-purpose flour
  • ½ cup + 1 tbsp (120 G) sugar
  • 1 packet of vanilla sugar or 1 tsp vanilla extract
  • 1 pinch of salt
  • cup (150 G) vegan butter or margarine

Instructions

  • Mix the ground nuts, flour, sugar, vanilla sugar, and salt in a mixing bowl.

  • Add the vegan butter in pieces and knead everything into a dough. Then wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  • Form 30 small balls (approx. 19g each) from the dough, flatten them slightly, and place them on the baking sheet, leaving enough space between them. Optionally, press a whole nut into the center of each cookie.

  • Bake the nut cookies in the preheated oven for about 12 minutes. (Note: the cookies will still be very soft immediately after baking!) Then leave them to cool on the tray until they are firm.
