Raspberry Love Letter Cookies – Diary of a Mad Housewife

These Raspberry Love Letter Cookies are not a new idea. I see them in several publications and on social media, both in Germany and in the United States. But, seriously, how cute are these for Valentine’s Day? I had to try my hand at them. I am moderately pleased with the result. However, this is because of my own clumsiness, and I needed more practice folding the dough.

Valentine's Recipe

These Raspberry Love Letter Cookies are so customizable. Use whatever flavor cookie recipe is your favorite. Chocolate comes to mind. Of course, you can tint the dough with food coloring. Or use beet powder for a more natural approach. Make the dough the night before and chill it to save time. Alternatively, to save even more time, use store-bought pre-made sugar cookie dough. No judgment here. Add any flavor jam you like. However, make sure the jam is completely smooth. Annoying bits of fruit will mess up your cookie game. So blitz the jam in a blender or food processor before you spread it on the cookie. Here is another tip for spreading the jam. Use a small paintbrush. This makes it way easier.

Gold Dust Makes Everything Better

I am all about adding bling to cookies whenever possible. Gold dust makes these Raspberry Love Letter Cookies pop. To apply the gold dust, dip a paintbrush into vodka or any clear alcohol. Then dip the brush in gold dust and paint the heart on the cookie. I this is too fussy for you, there are other ways to zhhush these up. Use candy decorations or edible glitter.

Obviously, the amount of cookies you will get depends on the sugar cookie recipe you use. I used my favorite recipe from Bake at 350. It’s a recipe that tastes great and, more importantly, there is no chill time for the dough. The recipe made over two dozen cookies.

Raspberry Love Letter cookies

Ingredients

  • Your favorite rollout sugar cookie recipe
  • 1/3
    cup
    raspberry jam**

Instructions

  1. Make the cookie dough according to the recipe’s instructions.

  2. Preheat the oven to 350°F.

  3. Line a cookie sheet with baking paper.

  4. Roll out the dough on a floured work surface.

  5. Cut out squares and the same number of hearts.

  6. Turn the square so the corners are pointing up and down.

  7. Fill each square with jam in the center.

  8. Use a small paintbrush to spread the jam out.

  9. Fold the bottom corner up.

  10. Then fold the side corners towards the center.

  11. Press a heart shape onto the center over the folds.

  12. Transfer to the prepared baking sheets.

  13. Place in the freezer for 10 minutes.

  14. Bake 12 minutes until golden brown.

  15. Transfer the cookies to a cooling rack.

  16. When the cookies have cooled completely, paint the hearts.

  17. Dip the second paintbrush into vodka, then into the gold dust, and paint the heart shapes on the cookies.

  18. When the hearts have dried, plate and serve.
