Quick fruit bread (vegan) – fine vegetables

I’ll keep it short: I love fruit bread. What could be nicer than a heavy, almost sticky slice of fruit bread with butter and salt or savory cheese and chutney? Not much, be honest. Of course, I know that I don’t belong to the majority of the population with my fruit bread obsession. I often have the feeling that most people really despise dried fruits and dried fruit, and raisins in particular are rarely liked. This doesn’t make sense to me: Even as a child, my grandmother’s favorite thing to buy for me at the market was milk rolls with raisins (“milk rolls” were what we called them on the Lower Rhine, but elsewhere they are also called shortbread or rolls) and to this day they are just as welcome in mares as in sweet porridge or hearty couscous.

But a fruit bread is of course something for more advanced people – and not for those on a tight budget. It’s really expensive if you buy figs, apricots, dates and plums, as well as almonds and walnuts. But the result is convincing. And at the bakery, fruit bread is not cheap either – depending on the provider and ingredients – sometimes you pay over 9 euros for 500 grams. You could rather bake one yourself and pull almost a kilo of bread out of the oven.

I was particularly impressed by the addition of the orange peel – you can taste it subtly and, in addition to the heavy sweetness of the dried fruit, it also gives the bread a certain freshness. I reduced the amount of cinnamon from 2 to 1 teaspoon. Next time I would also reduce the amount of sugar and maybe add caraway seeds to the dough. And yes, there will be a next time.

The fruit bread is served either plain, with butter and salt or a strong cheese. It can be cut into thin slices, frozen or divided into thirds/quarters and given as a gift.

By the way, this pumpkin fruit bread also tastes super delicious.

Ingredients

  • 100 G Plums dried
  • 100 G Figs dried
  • 100 G Apricots dried
  • 100 G Dates dried
  • 50 G Walnuts
  • 50 G Almonds
  • 1 Apple large
  • 1 Orange organic, large
  • 250 G Flour
  • 1 tsp baking powder
  • 2 tbsp sugar
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 100 ml Water

preparation

  • Cut the dried fruit into small pieces and roughly chop the walnuts. Put everything together with the almonds in a dough bowl.

  • Peel, core and grate the apple, then add it to the fruit and nut mixture. Wash the orange with hot water, grate the peel finely and squeeze out the juice. Put both in the bowl.

  • Then add flour, baking powder, sugar, cinnamon and salt, as well as 100 ml water. Mix all ingredients together well. Pour the mixture into a loaf pan lined with baking paper.

  • Bake at 170 degrees top and bottom heat for about 45 to 50 minutes.
