The creamy parfait with roasted almonds ensures the perfect wow moment on your holiday table, without any stress, because it can be prepared long before the party. And the roasted almonds? Not only do they smell wonderfully like a Christmas market, they taste fantastic and they are also the crunchy highlight in the parfait… if you manage not to eat them all first!

The secret recipe comes from a dear friend, she unpacked her culinary tips while eating goose and this almond parfait is really great. It’s easy to prepare and you can keep it in the freezer, so prepare it in peace and quiet a week or two before the party and then just take it out of the freezer and serve on the evening of the party. I’ve wanted to try roasted almonds in the air fryer for a long time – it’s super easy and you should try it too. It’s best to make a double portion and nibble on it or package it nicely and give it away. So you also have a last minute gift!

Recipe parfait with roasted almonds
For six Weck glasses each 160 ml
Ingredients
2 eggs
80g sugar
a heaped teaspoon of cinnamon
200 ml whipped cream
a tablespoon of bourbon vanilla sugar
a pinch of salt Simple and quick parfait with roasted almonds
preparation
- Separate the eggs and beat the egg whites with the salt and a tablespoon of the sugar until stiff.
- In another bowl, beat the egg yolks with the remaining sugar for five minutes until fluffy.
- Beat the whipped cream with the cinnamon and vanilla sugar for about two minutes – it should not be completely firm. Finally, fold the egg whites and the whipped cream into the egg yolk mixture, stir carefully to a homogeneous mass and chop about ten to twelve roasted almonds into small pieces and fold them in as well.
- Pour into jars and freeze for at least five hours (better overnight). Serve either in a glass or turned out onto a plate with the remaining roasted almonds.

2 tbsp water

- Mix in the almonds: Add the almonds to the sugar-cinnamon mixture and stir thoroughly until completely coated.
- Preheat the air fryer to 180 °C.
- Place the sugared almonds in the Airfryer and roast for 15 minutes, stirring gently every 5 minutes so that they caramelize evenly.
- Place the finished almonds on a baking tray/plate lined with baking paper and let them cool completely so that the sugar solidifies.
