Looking for a rice recipe?! I really like baked rice with roasted tomatoes – based on a recipe by Yotam Ottolenghi. Crispy Rice has been on everyone’s lips for a long time – it became a trend dish on TikTok as Crispy Rice Salad! I think it’s absolutely right that crispy rice tastes delicious. The classic crispy rice is usually marinated with chili or soy sauce and then usually baked in the air fryer. I really like that too because it’s super quick. This recipe also makes the rice crispy, but here slow-roasted tomatoes with cinnamon sticks, herbs and olive oil are the perfect starting point for the rice. It is “cooked” in the oven with the tomatoes and then baked until crispy. So delicious, you should try it again!

The rice recipe combines two absolute favorite ingredients:

Tomatoes and crispy rice – both are delicious on their own, but in this combination they are a real must on the plate. The tomatoes are slowly roasted in the oven with cinnamon sticks, garlic and herbs. This creates an incredible sweetness that harmonizes perfectly with the spicy aromas. The dish is uncomplicated, looks great and brings a breath of fresh air to the plate. It is also perfect for guests. The first time I ate it was at a Christmas party at my friend’s house and she simply combined a large quantity of it with a vegetable chili that was simmering on the stove. Just the kind of recipe you’ll want to cook again and again!

Recipe: Roasted Tomato Rice Recipe

Ingredients

600 g tomatoes (preferably mixed)

2 cloves of garlic

2 cinnamon sticks*

3 tbsp olive oil*

Salt, pepper

a few sprigs of thyme or oregano

200 g basmati rice

400 ml vegetable broth*

Chili flakes* for some spiciness

preparation

  1. Halve the tomatoes, put them in a baking dish with the garlic, cinnamon sticks, herbs and olive oil. Season with salt and pepper.
  2. Roast slowly in the oven at 160°C for about 40 minutes until sweet and aromatic.
  3. Wash the rice, drain it and add it to the tomatoes. Pour in water or broth.
  4. Cook everything together in the oven for another 25-30 minutes until the rice is soft.
  5. Finally, bake until crispy at 200 °C or in the air fryer.
  6. Serve with fresh herbs and a drizzle of olive oil.
