The slightly bitter radicchio develops wonderful roasted aromas on the grill that harmonize perfectly with the sweetness of grilled oranges, creamy burrata and roasted pine nuts. This Jamie Oliver recipe is simply something new. The slightly caramelized radicchio loses some of its bitterness and acquires a wonderfully smoky aroma. I like warm salad, even if you have to be quick when grilling it to keep it a little crunchy. Roasted pine nuts provide the right crunch. This salad is enough for me, but of course we also had a meat and fish side dish with it!
Jamie Oliver Recipe: Grilled Radicchio with Oranges & Burrata
Ingredients
2 tbsp liquid honey
1 tbsp red wine vinegar
2 clementines or small oranges
2 heads radicchio
2 crisp leaf salads
50 g pine nuts
1 bunch of thyme or rosemary (20 g)
1 ball of burrata (150 g)
preparation
- Preheat the grill, you can also use an air fryer or a pan.
- In a large serving bowl, mix 1 tablespoon each of honey and red wine vinegar with 2 tablespoons of olive oil to make a dressing.
- Peel a clementine or orange and cut it into thin, round slices, and halve the other fruit.
- Clean the radicchio and cut into fine strips, separating the leaves. Clean the lettuce and remove the leaves.
- Grill the clementine or orange halves, cut side down, until golden brown, then squeeze the juice into the dressing with grill tongs.
- Roast the pine nuts in a small cast iron pan on the grill for a few minutes, stirring regularly. Once they are golden brown, remove them.
- Grill or fry the radicchio and lettuce leaves until golden brown and carefully turn them with the grill tongs. When they are ready, add them directly to the dressing.
- Spray the bouquet of herbs with olive oil, place on the grill for 30 seconds and turn after 15 seconds so that it does not catch fire. As soon as it has cooled down a little, pull the leaves into the salad and mix everything carefully.
- Arrange the clementine or orange slices on the salad, sprinkle with the pine nuts, tear the burrata into pieces and add. Drizzle everything with the remaining 1 tablespoon of honey.
