
Cheesecake or cheesecake in any form is my favorite cake – creamy, slightly sour, not too sweet and always a pleasure. For our food blogger campaign #TastyForEveryDay under the motto Favorite Cake, I found a very special cheesecake recipe: small, delicate cheesecake pralines with a crispy streusel crunch. Perfect if you love cheesecake but want something new – or are simply looking for an uncomplicated, sophisticated alternative – try it out straight away!

What’s special about this cheesecake recipe?
The cheesecake mixture is refined with melted white chocolate, which also ensures that the mixture is firm enough to form balls. The balls can be easily cut out with an ice cream scoop and placed on cookie crumbs. The cookie crumbs are of course homemade and really delicious. I got the idea from a pastry chef friend who always places the chocolates on sprinkles. If you like it simple, use your favorite cookies, amarettini or lotus cookies are particularly suitable. Either you use a freezer bag or a food processor. If you want it to be even more perfect, create a classic cheesecake base out of cookie crumbs and butter and cut out round circles from it. That would be too complicated for me…

Cheesecake Recipe: Cheesecake Pralines with Crunch
Ingredients
For the sprinkles:
- 25g butter
- 25g sugar
- 50g flour
For the cheesecake balls
- 80g white chocolate
- 300 g cream cheese
- 150 g Skyr or low-fat quark
- 80g powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
preparation
- Heat the oven to 180 degrees fan. Knead fine crumbles from butter, sugar and flour. Bake these for about 8-10 minutes and let them cool. Alternatively, you can also buy cookies, such as Amarettini, and process them into crumbles in the food processor.
- Melt the white chocolate, I used the oven heat, alternatively over the water bath.
- Mix cream cheese, Skyr, powdered sugar, vanilla extract and lemon juice into a smooth cream.
- Stir the melted, slightly cooled white chocolate thoroughly into the cream until everything is evenly combined.
- Place the bowl in the refrigerator for about 30-45 minutes until the mixture is firmer and more pliable.
- Get the cheesecake mixture out of the fridge. I sprinkled a plate with the cookie sprinkles and used an ice cream scoop to scoop balls out of the cheesecake mixture and place them on top of the cookie sprinkles.
- Sprinkle the balls with the remaining cookie crumbs.
