

What is soul food to you? For me it’s this braised dish – super tender mustard meat with onions and carrots, everything simmers for a long time in the oven and combines into a wonderful treat! This 5-ingredient recipe based on Jamie Oliver is simple AND delicious and I have now prepared it twice in a row. Inspired by my son who loves cooking stew meat for his friends. This is a perfect dish for the whole family, for Sundays when it’s cold and the oven can be left on all day. The temperatures in Hamburg are currently the best for such comfort food. My contribution to our blogger campaign “Delicacies for every day” with the motto “Soul Warmer” or “Comfort Food”. In addition, this super tender mustard meat is suitable for everyone. I’m not the biggest meat fan, but I’m definitely up for such tender, good meat and, above all, I’m well aware of the healthy effects of really good meat. It’s not without reason that B12 was the only deficiency in my blood values. This dish has more carrots and onions for me and the delicious sauce. My men, on the other hand, are happy about a higher meat content. A large pot that keeps everyone full and happy – try it out right away!

What makes simple soul food?
The casserole recipe comes from Jamie Oliver’s “5 Ingredient Kitchen”*, one of my favorite books, and it’s not without reason that the subtitle of the book “Quick and Easy” is exactly the motto for this comfort food. For me the perfect Sunday dish, I like something uncomplicated, something that works and brings the whole family together for a meal in the evening. Of course, Quick is only suitable for preparation, braising takes quite a long time at 4 hours and has to be planned for! But in those 4 hours the flavors meld and everything falls apart in your mouth as you eat. The first time I cooked it I was surprised: I had never used so much Worcestershire sauce, pronounced “Wuusterscher”. For me, like olive oil or vinegar, it is one of the basic ingredients in my kitchen. But I usually use one or two “shots”, where almost the entire bottle is used. The seasoning sauce from England gives the dish an umami note, enhanced by the grainy mustard, which also looks great. By the way, the sauce is based on vinegar, molasses, anchovies, tamarind and spices.

What ingredients do you need for this comfort food?
- good Meat – Beef leg slices, preferably from a butcher you trust
- carrots – When cooked, the beta-carotene of the orange roots becomes optimally available and can act as vitamin A for the immune system and vision.
- Onions – unfold in the stew the caramelized onions have their full, sweet aroma.
- Worcestershire sauce – consists of vinegar, molasses, sugar, salt, anchovies, tamarind extract, onions, garlic, various spices and natural flavors.
- grainy mustard – The mix of whole grains and white wine brings an intense taste experience, and the mustard oils make the comfort food even more digestible.

For 4 people, preparation time 15 minutes, cooking time 4 hours
Ingredients
- 900 g beef leg slice (for me it was a little more than 1 kilo, but then more water)
- 500 g carrots
- 2 onions
- 120 ml Worcestershire sauce
- 2 heaped teaspoons of grainy mustard
preparation
- Preheat the oven to 160°C. Heat a large, shallow, ovenproof casserole dish over high heat.
- Cut the meat into 5 cm cubes and mix with plenty of black pepper and a pinch of sea salt. Fry together with the bone without fat until it has taken on a good color.
- Meanwhile, wash and clean the carrots and cut them into 5 cm pieces and add them to the meat.
- Peel and quarter the onions, then peel off the individual layers and drop them into the pot, stirring occasionally. Stir in Worcestershire sauce and mustard, then pour in 800ml or more hot water to cover everything.
- Cook the dish in the hot oven, covered, for 4 hours until the meat is almost falling apart. Season with salt and pepper and serve.
